The Department of Food and Feed Safety consists of more than 30 scientists who are involved in research and consultative activities in various food and feed safety topics. Research activities cover mainly bacterial and viral pathogens with zoonotic potential, food microbiology, feed safety and animal nutrition. The department is equipped with modern laboratory facilities, which are used for the development of new diagnostic methods, approaches and recommendations, identification of viral or bacterial agents from various biological and environmental samples, epidemiologic and pathogenesis studies and testing of antimicrobial and stress resistance of bacteria. Additionally, the Department of Food and Feed Safety participates in the education of students at the Veterinary and Pharmaceutical University Brno, Mendel University in Brno and Faculty of Science in Masaryk University Brno.

The department consists of five research groups in which two OIE reference laboratories and three Methodical and Consultation Centres (MCC) are included.

The group of Tuberculosis, Paratuberculosis and Mycobacteriosis of animals

• Collects and processes samples for cultivation and culture independent methods

• Identifies mycobacteria using culture and Ziehl-Neelsen microscopy

• Diagnoses presence of selected mycobacteria using serological methods (e.g. MAPIA, ELISA test for selected mycobacteria, agglutination for M. avium complex infections in birds and pigs)

• Performs basic research on epidemiology and environmental mycobacteriology

The Molecular Mycobacteriology group is specialised in

• Development of culture independent methods (DNA and RNA isolation, PCR, sequencing) for identification of Mycobacterium sp.

• Examination of biological samples for the presence of Mycobacterium sp. using culture independent methods

• Epidemiological studies on selected mycobacteria (Mycobacterium avium subsp. avium, Mycobacterium avium subsp. paratuberculosis, Mycobacterium avium subsp. hominissuis) using RFLP analysis

• Study of gene expression in Mycobacterium avium subsp. paratuberculosis as a response on stress factors

The aim of the Animal Nutrition and Feed Safety group is to

• Verify suitability of various non-nutritive feeding additives for livestock

• Verify the effect of non-nutritive feeding additives and their influence to animal’s health

• Analyse feeding mixtures

The Food Microbiology group is focused on

• Surveillance of bacterial contamination in raw food material, food products and food processing equipment

• Monitoring of antimicrobial resistance of selected bacteria

• Research in the area of bacterial biofilms and resistance to disinfectant agents

Main activities of the Food Virology group include

• Development of cell-culture independent methods (RNA and DNA isolation, RT-PCR, PCR) for identification of food-borne viruses (Genera: Adenovirus, Norovirus, Hepavirus and Hepevirus) in biological and environmental samples

• Collection of samples from vegetable and animal food product chains, and the detection of food-borne viruses in these samples

• Detection of hepatitis E virus in biological samples of domestic and wild animals, and in clinical samples of human patients
